A New Papillion Business: SPIN! Pizza Interview

Please tell us the story of how it began. (I love this story.)

Our owners, Gail and Richard Lozoff and Ed Brownell, had a vision to open a
pizza place with hand-spun pizza, salad and wine that had an atmosphere
that brings all types of people together to share a variety of dining
occasions. It wasn’t that there wasn’t enough pizza out there — there just
wasn’t enough GOOD pizza. Pizza like they make in Italy and they wanted to
bring that experience to an American audience in a fast casual environment.
They partnered with James Beard Award winner Michael Smith to create a
unique taste profile for SPIN!’s ingredients and pizza and salad
combinations.

SPIN! opened its first restaurant in Overland Park, KS in 2005. Since, we
have 5 more locations in the Kansas City metro (with 2 more on the way), 3
in Southern California, our Papillion location and plans for 4 restaurants
in Dallas Fort Worth.

What type of pizzas do you offer?

All of our pizzas are homemade and baked in our stone-oven in the
Neapolitan tradition — with thin and bubbly crusts. Our combinations are
creative twists on classic tastes. We serve hand-spun original and wheat
crust and gluten-free crust pizzas with crushed tomato (rossa sauce) or
roasted garlic olive oil glaze (bianca sauce). Our pizzas are topped with
fresh mozzarella, several different hand-grated cheeses and our SPIN! mix
of Italian cheeses and oven-roasted veggies, house-roasted chicken and
meats. We roast our veggies and meats every day in the same oven that bakes
our pizzas.

What do you have besides pizza?

Our homemade soups are made fresh daily — minestrone and tomato basil.

We are known for our salads; in fact some people eat pizza with their salad
instead of salad with their pizza!
Flatbread (rosemary flatbread baked in our oven) with homemade spreads:
white bean hummus, red pepper and goat cheese and lemon ricotta olive oil.

Our menu also features homemade sandwiches on challah bread with homemade
mayo spreads, crisp fresh lettuce and tomato and premium meats and cheeses
and grilled panini on farmhouse bread with melted cheeses, oven-roasted
veggies and meats.

For dessert, we serve gelato that is made for us from only natural
ingredients and flavorings. We don’t use bases as many gelato places do.
Our flavor selection rotates regularly so there’s always a new flavor to
try, like Blueberry Butter Cookie or Tiramisu.

We have a robust wine and beer selection of house wines, bottles from our
SPIN! BIN for $22 each, 8 craft beers on tap and a lineup of craft bottles.
We also have three types of sangria.

What is a difference between your restaurant and other pizza places?

At SPIN!, we make our dough fresh every day and hand-spin our pizza shells
in our open kitchen for guests to watch pizzas being made! We prepare all
of our ingredients in our stone-oven, so they are seasoned and packed with
flavor (herbs, garlic and olive oil) before they even land on a pizza. We
make our own sangria in house. We get rave reviews on our salads, too, that
are made with all homemade dressings and house-baked croutons. Almost
everything on our menu can be made gluten-free, vegan or vegetarian. We
take our guests’ diets very seriously, and are ready to customize anything!

area, especially the 370 corridor?

We are looking forward to growing with The Midlands place and 370 corridor
area and are excited to develop relationships with neighbor businesses and
neighborhoods.

Fairfield Inn Ground Breaking in Papillion at Midlands Place

At 9:00 AM, many people came out in Papillion  to show support for the ground breaking of Fairfield Inn on this bitter cold morning, including local officials Congressman Lee Terry, State Senator Jim Smith, Mayor David Black, City Councilman Tom Mumgaard. While the weather was bitter, the smiles and praise for the project and the city of Papillion were sweet.

Here’s a picture of what the Fairfield Inn will look like sans the snow and upon completion.
