Please tell me a little bit about your tacos.
Well, we do smoked brisket, smoked and brined chicken and smoked pork. We smoke them for good for four to six hours and cook them overnight. So it’s about 24 hour process. When we do a taco, we taco with little sweet chili sauce to kind of complement that smoke, a little lettuce crunch than cheese, and I make the cilantro lime sour cream that goes on top of that. And then fresh pico.
We also have a unique hot sauce that we get from South Africa. That’s comes in like a paste form. It’s really, really mean to start off with but I cut it about 20 to one to make it servable so it is a little bit of a tang but this is a very unique flavor that we don’t get in Midwest so far as hot sauce.
My wife’s from South Africa. It’s kind of what we’re we have a little bit of that theme that runs through our food.
How did you come up with the name, The Papillion Taco Guy?
Yeah, well, we have another food trailer that was called “Braii Time”. In South Africa, Braii is the word for their backyard barbecue style. And when the pandemic hits, we were not able to pull that around not having events like that to go to so I needed something small that I can operate myself. So we got this up and going tacos were our most popular item so we said let’s do this park on corner and have fun.
